As the name suggests, time-limited quests are missions in which the passage of time will be a factor. In Dragon's Dogma 2, you might not always have the option to explore or admire the scenery. Let's say you have just picked up a side quest to help find a lost little girl in the mountains but you decide to go searching for a new weapon instead of helping immediately. You will most likely find that innocent little girl ripped apart by wolves or monsters.
In some cases, you might not fail the quest if you take too long but there will be negative consequences. Also, it would seem that some missions will only be available at a specific time. So, you may have to decide between two separate quests, making multiple playthroughs a must if you want to experience everything Dragon's Dogma 2 has to offer.

Dragon's Dogma 2: Will All Quests Be Time-Limited?
Not all missions in Dragon's Dogma 2 will be time-sensitive. An hourglass will mark these particular quests in your journal. It is unclear whether or not NPCs will tell you before you accept the mission, or if you have to guess from the wording of the quest-giver.
