World of Warcraft Season of Discovery has certain limitations whether in terms of max levels on your character, profession skill level, or farming and gear opportunities, but that does not mean that you shouldn't pick up a primary and secondary profession.
There are some new recipes and ways to make use of the professions in the late game so we will be taking a look at the best ones currently available to you so you can either craft some much-needed items or find another way of getting some extra gold.
Although there still might be new secrets to be discovered by the community, currently certain professions yield a lot of useful items and materials so you can get the most out of Phase 1. With that being said, let's jump into the tier list!

WoW SoD S Tier Professions
These professions are a staple as not only can you craft the Epic Void-Touched gear that is otherwise inaccessible, but you can also get a lot of useful items to either help with farming Waylaid Supply crates or get some easy gold on the Auction House.
Blacksmithing
An essential profession for all mail-wearing classes so you can get some powerful Pre-Raid BiS items and craft some great gear so you can level up much easier whilst also getting some gold in the meantime.
Although the limitations in SoD Phase 1 might make it difficult to farm ores, you should still be able to fully utilize the available crafting recipes.

Leatherworking
Leatherworking offers a lot of value given how many classes wear leather gear, so you can rack up some easy gold on the Auction House and gain access to Void-Touched items that are currently meta-defining.

Void-Touched Leather Gauntlets
- Exclusive only to Leatherworking

Tailoring
Tailoring has a lot of demand as bag space is very limited in Phase 1 of Season of Discovery, so bags are in heavy demand. Every tailor can get a steady supply of gold whilst also being able to craft another Void-Touched item.

Engineering
Although Engineering has always been the most essential profession in Vanilla, it still holds a lot of relevance even when your skill level is limited to 150 during Phase 1. You can craft some essential Pre-Raid BiS gear for most classes and get access to some useful gadgets and bombs to make your gameplay more enjoyable.

Although these professions are also amazing in their own way, the tier above offers too much value to place these in the same category.
Alchemy
This profession will likely scale up as more phases are introduced to the game, as consumables are one of the most important parts of late-game raiding and maximizing your class' potential.
You can even get some gold as the materials you can craft are essential to craft Void-Touched gear.
First Aid
A staple for classes that do not have access to healing abilities, a well-timed bandage can help you survive a dangerous pull or encounter so you should always have some bandages on hand. This secondary profession is a must if you would like to level up and minimize any damage that comes your way.

WoW SoD B Tier Professions
These will be predominantly gathering professions and supplementary ones that can have some great utility for your character, but they are not on the same level as the ones listed above.
Enchanting
Enchanting currently does not offer too much value in these early levels, although all players looking to min-max are always grateful for getting a slight edge by having their gear enchanted so you can even make some gold from that as well.
Cooking
You can cook up some good meals that offer minor stat boosts, but it can help you when you are farming materials and run out of food or don't have any bandages available so you can heal up and get back into your adventures.
Since you are not limited by how many secondary professions you can get, you should pick up this either way.

Mining
The companion profession to either Engineering or Blacksmithing
Skinning
The companion profession to Leatherworking but you can also use it to farm up materials to sell on the Auction House.

The companion profession to Alchemy but you can also use it to farm up materials to sell on the Auction House.
Fishing
A supplementary secondary profession to Cooking so you can cook up some fish, but you can also get some great items from Wreckages that have a chance to give gear that is otherwise not available due to the level cap.

Overall, the gathering professions cannot be categorized in terms of usefulness as they are simply supplementary professions to help you with your crafting, but they can still offer a lot of value in terms of selling materials on the marketplace and still hold some relevancy independent of the main picks.
